I love these healthy fritters because they're quick, easy, and really tasty! It's another light way to make dinner or a side dish with zucchini!

First, marinate the zucchini: Cut the zucchini into thin strips (julienne) and let them sit with a pinch of salt for 10 minutes.

In a separate bowl, beat the egg, add a pinch of salt, the flour (making sure there are no lumps), the crushed red pepper, and the well-drained zucchini.

Using a spoon, form the fritters on a baking sheet lined with parchment paper and bake at 400°F (200°C) for 10 minutes!
