Pad See Ew might be the ancestor of the Rad Na dish, since the cooking steps are almost identical. The only difference is that Rad Na adds a step for simmering and making a thick sauce. It's believed that this simmering step comes from the Hokkien-style stir-fried noodles with broth. You can choose to add egg or leave it out, as you like.

Ingredients

Serves 1 serving
  • 1 cupwide rice noodles (about 150 grams)
  • 1 handfulChinese broccoli (gai lan)
  • 1large shrimp
  • 4-5 piecessquid
  • 2-3 pieceslump crab meat
  • 1large egg
  • 1 teaspoondark soy sauce
  • Soy sauce, salt, sugar, and pepper to taste
  • 1 tablespoonvegetable oil or pork fat

Steps

    Stir-fry the wide rice noodles with oil over medium heat. Drizzle the dark soy sauce evenly over the noodles and stir-fry until the noodles are evenly coated. Remove from the pan and set aside. Stir-fry the shrimp, squid, and Chinese broccoli stems with oil over high heat. Season with soy sauce, salt, sugar, and pepper to taste. Add the Chinese broccoli leaves next.

    Beat the egg and pour it into the pan. When the egg just starts to set, add the noodles and toss everything together. Stir-fry until the egg is fully cooked and dry. Since the crab meat is already cooked, just add it at the end and toss until heated through.
