Take maida in a large vessle. Add salt & ajwain. Mix well.

Add 3-4 tbsp oil and mix properly using hands.Now knead the dough by adding small portions of water. The dough should be little stiff and not very soft.

Cover the dough with a wet cloth & keep aside for 30 minutes.

For stuffing, boil the potatoes to 2-3 whistles. Mash them and keep them aside.

Heat 3-4 tbsp oil in a wok. Add peanuts & roast them at low flame. Strain them & keep aside.

Add green chilli & ginger paste in the oil. Saute for a minute.

Add salt, garam masala & mango power. Mix properly.

Add mashed potatoes & cook for 5-7 mints at low-medium flame. Add peanuts,peas & coriander. Mix properly & keep aside.

Knead the dough for a minute & make small dough balls. Apply few drops of oil on the rolling base and flatten the balls.Gently roll the balls in oval shape and cut them in half.

Apply little water on the straight corner & join them to make a cone. Fill in some potato mixture into it.

Apply little water on other edges & seal the samosa. Make all samosa with similar process. Cover samosa with a wet cloth & let them stand for 15 minutes.

Now deep fry samosa at medium flame. Keep turning them in between.

Serve hot with mint and tamarind dates chutney.
