This is a delicious rich creamy Mughlai recipe of chicken and goes best with any Indian flat bread or pulao.

Marinate chicken with little salt for half hour.Dry roast whole masalas and grind to a fine powder.Make a paste of ginger garlic,sesame and cashewnuts with curd and malai.Heat ghee and oil.Sprinkle half crushed cardamom,cinnamon and clove.When they crackle,add chopped onion and fry golden brown.Then add the ground dry and wet paste.Add the chicken,kashmiri red chilli powder,salt to taste and toss.Fry till oil leaves sides.Add 1/2 cup water and cook on low flame.

Add crushed kasoori methi,slit green chillies and malai or fresh cream and cook till oil floats.That is the essence of Chicken Maharani a rich creamy texture.Garnish with chopped coriander and garam masala.
