Ingredients

5 hours
2 servings
  • 2 cupsbeans
  • Left over stew
  • Fresh Scotch bonnet
  • Onions
  • Crayfish
  • Palm oil
  • cubesSeasoning
  • leavesUgu
  • Fried Plantain
  • Vegetable oil (for frying plantain)

Steps

5 hours
  1. 1

    Wash and soak beans for 3 hours

  2. 2

    Drain and wash again, put in a pot and bring to boil for 7 minutes, bring down from heat, drain water then wash drain again. Put in a pot add enough water enable to cook the beans.

  3. 3

    In a separate pot, add palm oil add onion allow to sauté add the left over stew, pepper, and seasoning cubes, add the cooked beans and ugu leaves allow to steam and bring down from heat.

  4. 4

    Serve with fried plantain.
