I struggled so hard trying to get the perfect white coconut rice and for my coconut rice to taste coconutty...
Then I tried using native rice, boom a whole lot of difference in taste and flavour. It's coconut rice, allow coconut take the taste by not adding ingredients that will end up fighting the coconut taste and flavour..
Maybe it's my taste bud, but for my white
coconut rice, am sticking to native rice ...#nigerianstreetfood

2fresh coconuts grated..
2 cupsnative rice
1seasoning cubes
Warm water
Grater
Pepper sauce of your choice

Steps

Grate and blend the coconut with warm water. Sieve out the milk and set aside. Make sure to get at most 5 cups of milk from the blended coconut..

Place a pot on heat, add water, add the rice, allow it to steam for about 5 minutes. Remove and sieve out the water. Rinse the rice.

Pour the coconut milk in the pot and place on heat, add the washed rice, add seasoning cube, add salt if need be.

Stir and allow the rice to cook on low heat until done and mushy. Add more coconut milk if need be....
delicious!!
Serve hot with pepper sauce....
