Steps

Add salt to the flour and mix. Add the cold cute pieces of butter and rub with fingertips to create breadcrumbs texture. Then add the sugar and mix with your hands.

Preheat oven to gas mark 7 (220 C) for about 10-15 minutes. In the meantime pour in the milk slowly and mix together and then knead until you form dough.

Sprinkle flour on the surface and roll out the dough approx. 1 inch thick. Cut out circular shapes or alternatively use a mini cutter to cut out various shapes as you wish.

Grease the baking and place the scones onto the tray.

Beat the egg and brush it on top of the scones, (this will give them a shiny surface)

Place in preheated oven for 15 minutes until golden brown. Let them cool before slicing them in half and adding in the filling.

Add one layer of whipped double cream and place chopped strawberries on top followed by the top layer of the scone creating a sandwich scone. Enjoy ;)
