Cut the cheese into pieces and rinse under running water, or change the water every 15 minutes to remove all the salt. Drain well in a strainer.

In a pot over medium heat, add the knafeh dough and butter. Stir until the dough is warmed through, then add a little rose water and orange blossom water for flavor.

Grease a baking pan with butter. Spread most of the dough evenly in the pan, pressing it down firmly. Reserve a little dough for later. Bake in a preheated oven from the bottom until the edges are golden brown.

Spread the cheese over the baked dough, keeping it away from the edges. Sprinkle the remaining dough over the cheese, then carefully flip the knafeh.

Place the pan over very low heat and rotate it constantly until the cheese melts. Drizzle the warm simple syrup over the knafeh, or place the pan over another pan filled with water on the stove.

Garnish the knafeh with pistachios. Enjoy!
