Okra with scallion oil is the perfect side dish to enjoy with braised fish and rice.

Wash the okra and trim the ends. Finely chop the scallions and add them to a small cup of olive oil, along with 1 teaspoon fish sauce. Microwave for 30 seconds.

Steam the okra until tender. Once cooked, place the okra on a plate and drizzle with the scallion oil. Serve alongside braised fish or braised pork for a delicious meal!
