Preheat the oven to 190°C

Lightly butter a shallow oven proof dish

Cut the unpeeled potatoes crossways into 4 and place the pieces in a pan of boiling water, cover and cook for about 25 minutes until just tender

Drain and when cool enough to handle, peel and slice quite thickly arrange in a single overlapping layer in the prepared dish. Sprinkle over the sugar and lemon juice dot with butter.

Top with the bacon and season well

Bake uncovered 435 to 40 minutes basting once or twice into the potatoes are quite tender

Preheat the grill to high heat and grill the potatoes for 2 to 3 minutes until they are browned and the bacon is crispy

Serve hot sprigs of flat leaf parsley is a garnish
