Steps

Wash and cut tripe into small pieces. Put in a pressure cooker, add water 11/2 cup place on heat and boil until soft. Remove from heat and drain the water.

In a separate sauce pan place on medium heat, add oil, add onion. Cook onions until soft, add tomatoes and half of the chopped coriander stir and cook until tomatoes break to a paste

Add the boiled tripe and stir. Add the tomato paste, salt and black pepper. Simmer for 10min turn off the heat and sprinkle the remaining chopped dhania. Serve hot with ugali.
