Aloo Gobhi, a dry potato cauliflower vegetable is an absolute delicious dish. Always found on the menu of almost all restaurants, it is a favourite in many bones too.
Cauliflower is a member of the cancer fighting cruciferous family of vegetables. This antioxidant rich, anti inflammatory vegetable boosts digestion and detoxification too! Not to forget the nutrition it provides our body.
Gobhi or as some call it Phool Gobhi in Hindi and Flower in Marathi, can be used in preparing many other dishes like parathas, pulaav, biryaani, tikka.
Aaloo Gobhi is a simple and subtle vegetable dish and goes very well with chapatis, naan, or just some daal rice. We used to order this dish from a particular restaurant. For quite a long time, after observing the dish closely I devised or say cracked this recipe of theirs. And it tastes exactly like restaurant one!

Ingredients

35-40 min
4-5 servings
  • 500 gmCauliflower
  • 2Potatoes
  • 2small Onions.... Finely Chopped
  • 1small Tomato.... Chopped
  • 1/2 tspTurmeric powder
  • 1 1/4 tspKitchen King masala (to be adjusted)
  • 1/4 cupFresh Coriander leaves
  • To TasteSalt
  • For The Tempering :
  • 2 tbsOil
  • 1/2 tspCumin seeds
  • 1/4 tspAsafoetida
  • 3large Garlic cloves.... Roughly Chrushed
  • 2-3Green Chillies.... Chopped
  • 1Bay Leaf (Tamalpatra/Tej Patta)

Steps

  1. 1

    To make aaloo gobhi, first soak the cauliflower or Gobhi in salted water for about half an hour. As a result, the worms, if at all present in the cauliflower will surface to the top and can then be easily discarded

  2. 2

    Peel and chop the potatoes into large wedges. Wash the cauliflower thoroughly and cut it into medium sized florets. Chop the onions and tomato finely. Chop the green chillies and lightly crush the garlic cloves.

  3. 3

    In a heavy bottomed pan, heat the oil and add the cumin seeds. As soon as they crackle, add the asafoetida and the garlic cloves. Saute and then add the green chillies and the bay leaf.

    Now add the chopped onions and saute adding about two pinches of salt. Add the turmeric powder and mix. Cover and cook for a while.

    Add the potatoes and cauliflower and mix well. Add some more salt.

  6. 6

    Cover and cook, stirring occasionally. When the potatoes are half cooked, add the chopped tomato. Mix well and cook again till the vegetables are cooked

  7. 7

    Add the kitchen king masala and salt to taste. Mix well and cook covered for a few minutes.

    When done, garnish with chopped coriander and serve hot with rotis or some steaming hot daal rice!
