The best part of the process was the delicious aromas during the 6 hours of cooking. It's actually really easy to make.

Prepare the adobo sauce.

In a pot of boiling water, soak the Guajillo and Pasilla chiles until softened.

Once the chiles are hydrated, blend them with onion, garlic, oregano, bay leaves, cocoa powder, and chicken bouillon. Add some of the soaking water from the chiles to help blend.

Rinse the beef tongue and place it in the slow cooker. Cook on high for 6 hours. (I added some beef bones to enhance the flavor.)

Add the adobo sauce.

Cook for 6 hours, considering this is for a 3.9 lb (1.75 kg) piece. If your tongue is smaller, reduce the cooking time. Check occasionally—it's done when the skin peels off easily and a fork goes in smoothly.

Remove the skin and shred the meat.

Ready to serve—enjoy!
