Growing up in the South, biscuits and gravy was a staple breakfast. Its comforting, hearty nature only amplifies when adding a dash of Italian flare. Spicing up the biscuits with Italian seasoning brings a zesty new twist to an old-fashioned favorite.

Preheat oven to 450°F and line two baking sheets with oven-safe parchment paper.

In a large bowl, whisk together flour, baking powder, sugar, salt, and baking soda.

Transfer half of the dry ingredients into a separate bowl. Add butter and beat until mixture resembles coarse crumbs with larger pieces remaining. Return this mixture back to the bowl with the rest of the dry ingredients.

Add the Italian seasoning and stir until fully combined.

Make a well in the center of the flour mixture and gradually add milk, stirring with a wooden spoon until large clumps form; do not allow a dough to fully form.

Turn mixture out onto a lightly floured work surface, using lightly floured hands to knead until a dough forms.

Pat dough into an 8x8-inch square. Using a 2-inch round cutter to cut biscuits from the dough. If you have too much leftover dough, repeat this step until all the dough is used.

In a small bowl, create the egg wash by whisking together the egg and water.

Transfer biscuits to the prepared baking sheets, spacing them about 2-inches apart. Brush the tops with the egg wash and place into oven. Bake for about 12 minutes or until golden brown.

To begin the sausage gravy, brown the sausage in a large skillet over medium-high heat until the sausage is thoroughly cooked.

Add the butter to the pan and stir it around until melted.

Sprinkle the flour over the sausage and stir for 2 minutes.

Slowly, pour the milk into the sausage-flour mixture, whisking constantly until the gravy is smooth.

Whisk in the seasonings. I personally add one seasoning at a time, but you can add them all at once. Taste the gravy and adjust the seasoning if necessary.
