Ingredients

  1. Sausage Gravy
  2. 1 tablespoonExtra Virgin Olive Oil or Butter
  3. 1whole Shallot, Finely Minced
  4. 1 poundGround Breakfast Sausage
  5. 2/3 cupAll-Purpose Flour
  6. 1 cupChicken Stock
  7. 2 cupsMilk (Preferably Whole)
  8. to tasteSalt and Pepper
  9. Biscuits
  10. 1 3/4 cupAll-Purpose Flour
  11. 1 tablespoon+ 2 teaspoons Baking Powder
  12. 1 teaspoonSugar
  13. 1/2 teaspoonSalt
  14. 1/4 cupButter, Cut into tablespoon sized pieces
  15. 3 tablespoonsShortening, Cut into tablespoon sized pieces
  16. 3/4 cupMilk plus an additional 1-2 tablespoons if needed

Steps

    Preheat oven to 400 degrees

  2. 2

    Sausage Gravy
    In a large oven safe skillet like cast iron, add olive oil, shallot, and sausage. Cook over medium-high heat until sausage is lightly brown.

    Sprinkle 2/3 cup flour over the top of sausage. Stir in flour until absorbed by grease.

  4. 4

    Slowly stir in chicken stock, and then 2 cups milk, to prevent lumps. Bring to a simmer and cook about 4 minutes until thickened. Add salt and pepper to taste.

    Biscuits
    In a large bowl combined 1 3/4 cup flour, baking powder, sugar and salt until well combined

  6. 6

    Using a pastry cutter or fork, cut in butter, and shortening, until mixture resembles small peas.

  7. 7

    Slowly stir in 3/4 cup milk, until dough sticks together. Be careful not to over mix. Add an additional 1-2 tablespoons milk if needed.

    Drop 10 equal sized spoonfuls of biscuit dough over the top of sausage gravy.

  9. 9

    Bake for 25 minutes, or until biscuits are golden brown, and a toothpick inserted into the center of biscuit comes out clean.
