Sugar palm are available during this season only.Normally people make this fritters on the auspicious occasion of Janmashtami.This fritters are made from fresh ripe juicy Palm. They are sweet in taste and easy to make.
Steps

Wash sugar palm thoroughly and remove the outer black skin from the fruit.

Separate the kernels. by pressing softly.

Take some water in a bowl to sprinkle over the kernels.

Now grate the kernels one by one and separate the juice from the the fiber of the kernels.

Take the extracted juice in a kadai and start cooking the juice on medium flame for 8 to 10 minutes or until the juice thickened.

Now switch off the flame and leave it to cool down a bit.

Now add wheat flour,rice flour, grated coconut and sugar into it and mix vigorously. The batter is ready now for frying.

Heat oil in a kadai for frying, pour 1 tablespoon batter in the oil to make sweet palm fritters.

Fry around 10-12 fritters at once.

Fry until the fritters turn brown in colour.

Stain all the fritters from oil when done.

Sweet palm fritters are ready to serve.
