Combine maida,flour,salt,sugar,oil in a bowl...mix well..add water and knead into a medium stiff dough..cover and keep aside for half an hour..

For Filling..Boil the potatoes in a cooker for 1 whistle in high flame then 5 mins in slow flame...peel the skin and mash the potatoes then take a bowl add potatoes and all the ingredients and mix well..The stuffing is ready...

Take the prepared dough and apply some oil and knead well..

Make small balls from the dough..

Take one ball and roll it then cut into half..

Take one part and fold in the shape of a cone..Fill it with the stuffing..apply water on the edges and seal the samosa.. similarly prepare samosa from the other part too... continue the procedure with the entire dough...

Heat oil in a pan and deep fry the samosa both sides till golden brown..

Aloo samosa is ready to serve.. Serve it hot with chutney or tomato sauce..
