My mom was always in charge of making tzatziki because hers was perfect. After I moved to Cyprus, she gave me the recipe and shared her secrets, and I added mint since it's common here and I loved the combination... After that addition, my parents decided I should be the one to make tzatziki from now on... 😉 So, mint and some good bread! (Or maybe grilled bread, right???) 😋😋😋

Ingredients

20 minutes
Makes about 2 1/4 lbs tzatziki (1 kg)
  1. 2 1/4 lbsGreek yogurt (1 kg)
  2. 4garlic cloves
  3. 4small cucumbers
  4. 1 1/2 teaspoonsdried mint
  5. 1 tablespoonred wine vinegar or apple cider vinegar (not heaping)
  6. 1/2 cupolive oil (the secret to great flavor, according to Mom)
  7. Salt
  8. White pepper

Steps

20 minutes
  1. 1

    Wash and peel the cucumbers and garlic, then place them in a blender with 1 teaspoon salt and the mint. Blend, then transfer to a strainer and let drain for 10 minutes while you prepare the rest.

    In a bowl (you can use the serving bowl), add the yogurt, vinegar, olive oil, salt, and white pepper. Mix with a fork.

    Add the well-drained cucumbers. (Important: If they still have excess water, press them with a fork to remove it.)

    Mix everything together and smooth out the tzatziki. If you like, garnish with a few mint leaves and serve ideally the next day. (If you can't wait, serve right away—it will still be delicious!) 😊
