Mike's Chicago Dogs & Beer Brats Mike's Chicago Dogs & Beer Brats
Please forgive the overly detailed directions on such a simple grilled dish. This evening, my 7 year old culinary students were charged with not only creating and grilling their own dishes - but writing down their own instructions and taking their own photos. Also, detailing them for other cooks online. I thought Cookpad was a great medium for them. I really do appreciate your time and patience with this easy to follow recipe fellow Cookpad Chefs. Thanks! ;0) Excelent work lads and lassies! MMOBRIEN -

Brad's homemade apple & beer bratwurst Brad's homemade apple & beer bratwurst
This is also something that I would do all the time when I raised pigs. I buy pre mixed seasoning packs from a company called Excalibur. These are easily found online from their distributor at Waltons. I have both hand seasoned, and used these in the past. In my opinion, these packs are the way to go. They come with everything you need. These are a quality product, and this helps get a consistent product every time. The seasoning packs are for 25 lbs of meat. I try for a 70/30 ratio of meat to fat. If you prefer to not use beer, substitute with the same amount of ice cold water. wingmaster835 -

Mike's Fresh Crab Meat Sliders Mike's Fresh Crab Meat Sliders
What a great little outdoor Sunday brunch idea. These sliders are so rich, so fresh, so chilly and so crispy! They're even better with my super easy Creamy Avacado Dip / Spread added to the bread. Look for that recipe at the top of my page.So easy to make - know that tiny 7 year old adventurous fingers made this dish completely unassisted. They even took their own photos!Do not use real crab meat in this dish as it will only serve to make your sliders way too rich to digest. Stick with immataion crab meat - aka - white fish and you'll do fine. Great work students! MMOBRIEN
