Ingredients

4-6 servings
  • 1 tablespoonolive oil
  • 1 poundfresh spinach
  • 3 cupscorn kernels
  • 1/4 cupschopped cilantro
  • 2 cupsshredded Monterey Jack cheese
  • 1 packagesoftened cream cheese
  • 1tomato, chopped
  • 4large poblano peppers

Steps

  1. 1

    Preheat oven to 350.

  2. 2

    Heat oil in a large skillet and sauté the spinach until wilted. Transfer to a large bowl and mix in the next 5 ingredients; season with salt and pepper.

  3. 3

    Cut a slit along the side of the poblanos and remove the seeds and ribs. Fill the peppers evenly with the spinach mixture.

  4. 4

    Roast the peppers on a greased baking sheet until peppers are soft and filling is bubbly; about 30 minutes.
