Ingredients

  • 1 pkgcooked angel hair pasta
  • 3red bell peppers (julienned)
  • 3yellow bell peppers (julienned)
  • 3green bell peppers (julienned)
  • 1red onion (julienned)
  • 1 pkgedamame (shelled)
  • 1 pkgfrozen broccoli
  • 1/4 cupsesame seeds
  • 1 cuppeanut butter
  • 1/4 cupsoy sauce
  • 1/2 cupsesame seeds
  • 1/2 cupolive oil
  • 21 ozcoconut milk

Steps

  1. 1

    Combine all vegetables and cooked pasta

  2. 2

    In oven safe container, combine 1/2 cup sesame seeds and 1/2 cup olice oil

  3. 3

    Bake in oven at 375 for about 15 minutes until seeds are toasted and slightly browned.

  4. 4

    Allow to cool

  5. 5

    Combine peanut butter, soy sauce, coconut milk, and whisk until smooth (if you own an immersion blender, now is the time to use it).

  6. 6

    Add toasted sesame seeds and oil

  7. 7

    Whisk until smooth

  8. 8

    Combine with pasta and vegetables

  9. 9

    Toss to coat
