Wash the vegetables and place them in the pressure cooker (potato, zucchini, and carrots) along with the meat and spices.

Blend the tomatoes with the onion, garlic, and chipotle peppers in adobo sauce with a little water.

Pour the mixture into the pot with the meat and vegetables, add water, close the lid, and cook on high heat. Once the valve releases steam and starts to jiggle, reduce to low heat and cook for 30 to 35 minutes.

Once the valve drops, uncover and let it sit for a while before serving.
