Sugar Beans Curry

Soak the beans overnight. Boil the beans till tender.

Whilst beans are boiling make the tomato chutney ready.
Braise onions with cumin, curry leaves and cardamom pods till lightly golden, then add masala and spices - ground red chillies, ground garlic, salt, chilli powder, coriander powder, turmeric powder. - 3
Braise till fragrant then add tomatoes.
Cook tomatoes till ⅓ reduced, then add beans.
Cook till the gravy starts to thicken.
Add in sauces tomato sauce and Worcestershire sauce. - 4
Cook till gravy has thickened to consistency you wish.
Garnish with coriander. Serve with soft white bread or roti - 5
I like to add a splash of vinegar to my own serving before eating and usually serve with katchumar and in a quarter loaf on unsliced white bread to make beans bunny chow!
