Some people love cheese, and some are loved by cheese 😂 I’m definitely in the second group 😉 Ever since I was little, I’ve been drawn to any recipe with cheese, and I absolutely love making them 🧀 Of course, I couldn’t pass up gougères 😋 These little savory cheese puffs made with Emmental or Gruyère are simply irresistible 😍 I highly recommend you try them 😋 And if you do, don’t leave the table—they’ll disappear very quickly, especially if there are kids around 😂

Preheat the oven to 400°F (200°C).

Line a lightly buttered baking sheet with parchment paper.

In a saucepan, melt the salted butter over low heat, then add the water and bring to a boil.

Remove the pan from the heat and add all the flour at once. Stir quickly with a spatula.

Return the dough to the heat and cook for a few minutes, stirring so it doesn’t stick.

Remove from the heat, then add the eggs one at a time, mixing well with a spatula after each addition.

Add the shredded Emmental cheese and gently mix.

Fill a piping bag with the dough and pipe small mounds onto the baking sheet, leaving some space between them.

Sprinkle the gougères with Parmesan cheese, then bake for 25–30 minutes until golden brown.

In a small bowl, mash the cream cheese with the crispy fried onions.

When the gougères are warm, fill some with this mixture and leave others plain.
