Preheat oven, as for jiko oven preheat 10 minutes prior baking

Grease your baking tins,use 2tins for 1kg this helps in cake rising,i always freeze my baking tins few minutes before baking to get flat tops

In a bowl, sieve flour+cocoa+baking powder+baking soda+salt and set aside

Beat magerine and sugar+peppermint essence untill fluffy and add beaten eggs one by one as you mix fold in mala and flour mixture alternating. Finally add hot coffee and fold in,pour batter in greased tin

Bake for 45 minutes until a toothpick comes out clear when inserted at the middle of the cake, cool the cake 15 min before removing from the tin,it yields 1.5 kg, enjoy with a cup of tea
