Salted daikon (xá bấu) becomes crisp and sweet when properly prepared, and is commonly used in stir-fries, braises, and noodle soups. It's also a popular ingredient in vegan dishes.

Slice the salted daikon diagonally into pieces about 1/8 inch (3mm) thick. Place in a colander over a bowl, soak for 20 minutes, then rinse several times and squeeze out excess salt. Marinate the daikon with a pinch of sugar for 5 minutes.

Cut the tofu into bite-sized pieces.

Fry the tofu until both sides are golden and crispy. In a pan, sauté the minced onion and garlic until fragrant, add the daikon and stir-fry, then add the mushrooms and a splash of soy sauce. Finally, add the fried tofu and season to taste with more soy sauce and sugar if needed.

Transfer to a plate, sprinkle with chopped green onion and ground black pepper, and serve with hot rice.
