The aloo capsicum sabji is a delicious and simple and lip smacking recipe that you can make for a quick weeknight dinner or pack into a lunch box.The flavors of roasted capsicum along with aloo with simple masalas,makes it delicious to eat..
Steps

Wash and peel potatoes,cubes them and keep them immersed in a bowl of water.

Wash and cut the capsicums,chopped them and keep them in a bowl.

Add oil to a hot pan.when the oil turn hot add cumin seeds and fry them till they begin to splutter.Next add in onion and green chillies.fry until transparent stirring often.

Then add ginger garlic paste and fry till a nice smell begins to come out.Add chopped tomatoes and saute for 5 minutes for medium flame.

Drain the water from potatoes and add them to the pan,saute for 2 minutes.cook covered on a low to medium heat until fork tender or soft.If needed sprinkle little water while cooking.

Lastly add capsicum,turmeric,red chilli powder,garammasala,dhaniya powder and then salt as needed.stir well and fry until the capsicum is done yet crunchy.

Serve aloo capsicum with rice,bread and roti.
