Heat 1 & 1/2 tbsp. Cooking oil in a nonstick pan. As its hot 1 tsp. Jeera, as it splutters add 1/4 tsp. Hing, 2 chopped green chillis & 3 chopped onions, add little salt & saute the onions for 2 minutes, and add 1 tsp. Ginger garlic paste, saute until the paste gets properly fried & add 2 chopped tomatoes & keep frying until tomates are cooked. Now add dry masalas

1/2 tsp. Haldi powder, 1 & 1/2 tsp. Red chilli powder & 1 & 1/4 tsp. Dhaniya powder & fry the masala for approx 2 minutes & add 3 potatoes cut in cubes mix it & add 1 big bunch methi(washed & chopped) & keep stirring until all the ingredients gets mixed well in masalas. Now add salt as per taste.

Cover the lid and cook for 6 to 8 minutes, or until the sabji is cooked (keep stirring in between) As the sabji is cooked open the lid and fry the alu methi sabji for a minute. And its done. OUR ALU METHI KE SABJI is ready to serve..
