Peel your chicken thighs skin,put it inside a pot add spices and seasonings,add a little water and allow it to cook till its soft.

Boil your potatoes and smash them, add spices and seasonings, add scotch bonnet and mix well.

Divide your smashed potatoes into your thighs, and beat your eggs in different bowl, put flour or bread crumbs in another bowl.Rub oil in your hand and take one portion of your smashed potatoes and take one thighs, coat the thighs very well with the smashed potatoes and deep it inside flour, remove from flour and deep inside the beaten egg,you can repeat the process and then fry it inside hot oil.
