Blanch the spinch in boiling water for 30se. Then immediately take out and place into ice cold water so green colo of leaf could maintained

Take a mixer grinder add blanched spinch and green chillies, ginger and make a fine paste. Keep it aside

Now take a plate add 1. 5 cup wheat flour, and spinch puree, and salt, knead a medium soft dough.

Now take 1. 5cup wheat flour, add salt in it, add little by little water and knead a dough, keep both dough aside.

For stuffing : take a pan add 1 tsp oil in it, then add grated garlic,chilli finely chopped broccoli, pea, saute them for 1 min, then add finely chopped spinch then add grated paneer, mix well, and cook it for 2 min in low flame, then add roasted besan.

Add garam masala mix well, add salt, switch off the flame and add lime juice. Mix well, keep the stuffing for cooling

Divide it and make balls.
Make big disc (Roti) of each dough ball with rolling pin. Dust some dry wheat flour while rolling

Run knife through it to make strips.

Take one colour strip and fold alternate strip backwards till end.
Place green colour middle stripe on that and unfold all again.
Now fold other order
Repeat process till the end. - 10
Now, place green stuffing one side of paratha

Apply water on egdes and fold it and seal it with hand.

Place this paratha on hot tava, apply some ghee, and roasted on both side on low flame.

Your stuffed green veggies paratha is ready to eat. Serve it with pickel or catch-up. Or sabji.
