Preheat oven to 350°F. Prepare a 9x13-inch pan with non-stick cooking spray. Set aside.

Prepare the streusel topping: melt coconut oil in microwave for 45 seconds. Add the brown sugar, flour and cinnamon and mix together with fork until crumbly. Place in the fridge while making the cake batter.

Make the cake batter: In a large mixing bowl, mix the coconut oil and granulated sugar with a hand mixer or a stand mixer until the sugar with a starts to dissolve into the coconut oil. Unless the coconut oil is solid, there is no need to melt it.

Beat in the eggs, one at a time, until well incorporated. Mix in the vanilla extract, orange zest and lemon juice.

Add the Greek yogurt and milk and mix till combined.

Add in the flour, baking powder, cinnamon and salt. Mix until just combined. Fold in the fruit.

Spread the batter evenly into the prepared pan. Crumble the streusel topping evenly over the top of the batter.

Bake for 45 minutes or until a toothpick inserted comes out clean. Serve warm or completely cooled.
