Cooking Instructions

Boil meat in garlic garlic paste, deep fry the potatoes. Set aside.

Heat oil in a pot add whole spices till they splutter.

Add onion and meat without broth to brown.

Add ground spices mix well.

Add tomatoes, paste and pureed. Let it cook till oil separates.

Add your potatoes and mix gently so as not to mash them. You can add about half cup water depending on how you want the curry. Simmer on low medium heat till thickens as desired.

Serve with accompaniment of choice.

I was looking for something different to do with a roast I had in the freezer and this didn't disappoint. I borrowed a technique from Kenji Lopez-Alt in caramelizing the onions. Adding the water allows the Maillard reactions (responsible for browning) evenly and without burning the onions, resulting in sweet, savory onions.
