Tamiya or Taamiyah is basically like falafel. Tamiya is prepared with little difference in Egypt, Sudan or middle eastern country. In Egypt Fava beans are used to make Tamiya while in Sudan they use chick peas. Along with chick peas, dill leaves are key ingredient of Tamiya. The Sudanese use chick peas for making Tamiya. I made Tamiya using split gram and additional Indian spices.

Ingredients

15 minutes
4 persons
  • 1 cupsoaked split grams
  • 1 cuproughly chopped dill leaves
  • 1roughly chopped onion
  • 3-4green chillies
  • 1 tspsesame seeds
  • 1 tspdry coriander seeds
  • 1/2 tspfruit salt
  • to tasteSalt
  • as neededOil for frying

Steps

15 minutes
  1. 1

    In a mixture jar, add split gram, onion, garlic, green chillies and dill leaves. Coarse grind it without adding water.

  2. 2

    Dry roast and roughly pound coriander seeds. Add pounded coriander seeds, sesame seeds, salt and fruit salt, just before you want to fry Tamiya.

  3. 3

    Mix well and fry tamiya in pre heated oil from all sides, on medium flame.

  4. 4

    Serve hot with bread and coriander chutney.
