Although Monsoon rainfall is less or no in many places of India, the craving for deep fried recipes still persists.
Here I am presenting Mixed Vegetable Fritters, an innovative recipe of mine. I have taken vegetables like Cabbage , Capsicum and Carrot are main ingredients. I always use the winter veggies(when available) to prepare a bowl of fried veg and store in refrigerator for further use in making Omelette , Uttapam , Chila , Oats/ Semolina / Wheat dahlia Upma , Pasta , Noodles in less time.
Here, the outcome in this type of preparation is wonderful , tasty and yummy with Tomato pickle (post-21, golden apron). Fritters are crunchy. Try to grab as soon as they come out from the kitchen.

Steps

Mix 1 cup of cooked veggies with 1 cup of gram flour and 1 tbsp water in a bowl.

Mix properly. Now take and rest other ingredients including 1/2 cup of gram flour, 1 tbsp rice flour except baking soda and salt.

Add water little by little to make a thick batter. Now add baking soda and required salt.

Heat the cooking oil. Deep fry the fritters in medium-low flame on each side till golden brown. Keep on kitchen paper to release extra oil

Arrange on a plate and serve hot with tomato sauce and chilli sauce or tomato pickle.

* Here we are mixing gram flour (besan) with cooked veggies.**Processed cheese (paneer), green peas can be used.
***Baking soda can be skipped by using curd
