Coconut rice with Dhaniya Aloo

First we make the coconut rice. In a pan with oil, fry mustard seeds and urad dal till it sputters.

Add the green chillies, dessicated coconut and fry till it turns aromat.

Add the boiled rice and salt. A little oil of rice is too dry. Mix well.

Garnish with tempered curry leaves.

To make Dhaniya Aloo: wash, peel and cube potatoes. Fry them In a nonstick pan with butter until crispy.

In a mixer grinder make a paste of remaining ingredients under Dhaniya Aloo. Add the paste to the pan.

Add the chilli powder, turmeric powder and Dhaniya powder to this. Cover and cook on medium flame until it dries up.

Add the fried potatoes to this and mix well.

Serve hot Dhaniya Aloo with coconut rice and applam.
