Soak the soy chunks in hot water for 10 minutes to let them expand.

Squeeze out the water thoroughly and set aside.

Grind the soy chunks coarsely in a blender without adding water.

Heat 1 tablespoon oil in a pan. Add the chopped garlic, onion, bell pepper, and green chilies. Sauté until slightly softened, then add the ground soy chunks.

Add soy sauce and 1/2 teaspoon salt. Cook for 2 minutes, stirring, until well combined. The filling is now ready.

In a bowl, mix the all-purpose flour with 1/2 teaspoon salt and oil. Knead into a soft dough, cover, and let it rest for 10 minutes.

Divide the dough into small balls. Roll each ball into a small circle (like a poori). Place a spoonful of filling in the center and shape into momos or your preferred shape.

Add water to a steamer or large pot and bring to a boil. Place the momos on a steamer rack or idli stand, and carefully set it in the pot. Steam on low heat.

After 10 minutes, remove the momos (they should look translucent and shiny when fully cooked). Serve hot with spicy momo chutney.
