Ingredients

  • 1fennel bulb, sliced thinly
  • Fennel fronds from the bulb, chopped
  • 1 tbspchopped dill
  • 1 tbsplemon juice
  • 1 tbspolive oil
  • 5fresh peaches, sliced into half inch wedges
  • 3 tbspwhite wine vinegar (1 tbsp for the fennel, 2 for the peaches)
  • to tasteSalt

Steps

  1. 1

    Toss fennel with lemon juice and 1 tbsp vinegar and season with salt. Let marinade in the fridge while you make the peach.

  2. 2

    Toss peaches with 2 tbsp vinegar and season with salt.

  3. 3

    Mix the fennel into the peaches evenly. Sprinkle fennel fronds and chopped dill on top. Drizzle with olive oil.
