This is a typical Bengali platter including healthy pumpkin fry, Taro Stolon with prawns stir fry, Roho Labeo fish stir fry curry and steamed Chinigura rice.

Pumpkin ( "Misti Kumro" in Bengali language) has a range of fantastic health benefits, including being one of the best-known sources of beta carotene.

Beta-carotene is a powerful antioxidant. It also gives orange vegetables and fruits their vibrant color. The body converts any ingested beta-carotene into vitamin A.

Taro Stolon" is called "kochur Loti" in Bangladesh. The health benefits of taro Stolon include its ability to improve digestion, lower your blood sugar levels, prevent certain types of cancers, protect the skin, boost vision health, increase circulation, decrease blood pressure, aid the immune system and prevent heart disease, while also supporting muscle and nerve health.

With the prawns, it becomes more healthy and nutritious.

Ingredients

  1. For steamed rice:
  2. 1 cupChinigura rice
  3. 1.5 cupwater
  4. For pumpkin fry :
  5. 1 cupchopped pumpkin
  6. 2green chillies
  7. 2 tablespoonchopped onions
  8. 2 tablespoonoil
  9. Salt as required
  10. For taro stolon with prawns :
  11. 1 cuptaro stolon
  12. 1/4 cupprawns
  13. 1 tablespoonchopped onions
  14. 2green chillies
  15. 1/2 teaspoonginger-garlic paste
  16. 1/2 teaspoontermeric powder
  17. 1 teaspoonred chilli powder
  18. 1 tablespoonoil
  19. 1/4 cupwater
  20. to tasteSalt
  21. For Roho Labeo stir fry curry:
  22. 4 piecesRoho Labeo fish
  23. 1.5 teaspoontermeric powder
  24. 1 teaspoonred chilli powder
  25. 1/4 teaspooncumin powder
  26. 1 teaspooncoriender powder
  27. 1 teaspoonginger-garlic paste
  28. 2 tablespoonchopped onions
  29. 2green chillies
  30. Oil as required
  31. 1 teaspoonlemon juice
  32. Salt as required
  33. 1/2 cupwater

Cooking Instructions

    For rice : Clean the Chinigura rice with water and drain it. Keep it in the rice cooker and put 1.5 cup water into it. Then cook it. After cooking keep them aside.

    For pumpkin fry: Take a frypan, put oil and heat it on stove. Now put green chillies and chopped onions with salt as required. After 1 minutes frying, put the chopped pumpkin into it and fry covering the pan. Then stop the flame when it's done.

    For Taro Stolon: wash the prawns and put them in a bowl. Put one pinch of termeric powder with salt and keep them aside. Now clean the Stolon and cut into medium pieces. Wash them.

    Take a frypan, put some oil and heat it on stove.put the marinated prawns into it and fry 1 minutes in high flame. Now Put green chillies and chopped onions with salt as required. Fry 1 minutes. Now put ginger garlic paste with termeric powder, red chilli powder and stir fry for 2 minutes. Now put the taro Stolon into it with 1/2 cup water. Now cook them covering the frypan. When it's done, stop the flame immediately.

    For Roho Labeo curry : wash the Roho fish and take it into a bowl. Now put one pinch of termeric powder, 1/4 teaspoon ginger-garlic paste with lemon juice and salt into it. And marinate it for half an hour. After Marination, medium fry the fish into frypan and keep them aside.

    Now take a frypan, put some oil and heat it on stove. Put green chillies and chopped onions with salt and fry for 1 minutes. Now put ginger garlic paste into it with termeric powder, red chilli powder, cumin powder and coriender powder and stir fry for 2 minutes. Then put the fried fish pieces into it with water as required and cook untill it's perfectly done. Stop the flame.

    Now in a plate, put 1 cup steamed rice, some pumpkin fry, some taro Stolon and prawns curry in one corner and 1 pieces of Roho Labeo fish with curry aside. Gurnish the platter including lemon and green chilli and serve hot. Enjoy 😊.
