An Indiana favorite. Perfect with a spoon of cool whip on top. This was my favorite growing up, we had three persimmon trees and collected them every fall. I would look forward to this pudding all year.

Ingredients

30-45 min
12 servings
  1. 2 cupsPersimmon Pulp
  2. 1 cupevaporated milk
  3. 1 cupsugar
  4. 1 cupflour
  5. 2 tspvanilla
  6. 1 tspsalt
  7. 1 tspbaking powder
  8. 1 tspcinnamon
  9. 1egg
  10. 1/2 tspbaking soda
  11. 1 stickbutter
  12. Whipped cream

Cooking Instructions

30-45 min
  1. 1

    Melt butter and pour into in a 13x9 baking dish

  2. 2

    Mix all other ingredients well and pour into dish with butter. Mix around untill butter is swirled into Persimmon mixture.

    Bake at 350° for 35-45 min, untill edges are pulling away from the dish

  4. 4

    Let cool and serve with whipped cream. This is not an option, whipped cream is part of the pudding, without it, this dish is not the same.

There are a bunch of persimmons ripening on a tree next door. I've never tried this, but heard of it recently, and looking forward to giving it a shot.
