Instant Pot Jambalaya

Ingredients

  1. 1yellow onion
  2. 2green peppers
  3. 1 Tablespoonminced garlic
  4. 2 tablespoonsolive oil
  5. 2 lbsandouille sausage
  6. 1celery stalk
  7. 14.5 ozcan fire roasted diced tomatoes
  8. 14.5 ozcan tomato sauce
  9. 2 cupschicken broth
  10. 2 teaspoonsWorcestershire sauce
  11. 1 teaspoonCajun seasoning
  12. 1 teaspoonLouisiana hot sauce
  13. 1/2 teaspoonblack pepper
  14. 1/4 teaspoonthyme
  15. 1-2 lbsshrimp (optional)

Cooking Instructions

    In sauce pan fry onions, peppers, and celery using 1 Tablespoon oil until al dente.

    In Instant Pot fry sausage on Sauté using 1 tablespoon oil until brown.

  3. 3

    Mix all ingredients in Instant Pot and set to 5 minutes on high.

  4. 4

    Open lid and put shrimp in to cook. It should take 5-10 minutes for shrimp to cook without however you can turn on sauté if you want to ensure they cook.

    Serve with long grain rice, Spanish rice, dirty rice. I like making my rice with chicken broth instead of regular water.
