I also used fresh beetroot- feel free to use precooked and skip step 1.

A twist at a traditional hummus recipe- I add loads of lime for a fresh kick!
I also used fresh beetroot- feel free to use precooked and skip step 1.
Cooking Instructions

Peel the beetroot and chop into medium pieces. Boil for about 30 minutes, until the beetroot is soft. Drain and leave to cool. Mash or blend the beetroot.

Drain the chickpeas, leave the water to the side. Juice the limes and chop the garlic. In a large bowl add all of the ingredients together with 2 tablespoons of the chickpea water and whizz together (using a standing or hand blender.)

Season to taste. If the hummus is dry add some more chickpea water. Adding more tahini or oil will make it more rich. When it's smoothly combined transfer to another bowl and drizzle with a little oil and lime.
