Vadapau are famous in Maharashtra state. They serve simple spicy vada with a bun. The main thing in that is two delicious and spicy chutneys.. One is green liquid chutney and the other main attractive one is red dry chutney. Actually these two chutneys make the vada Pau delicious.. so lets make it all from scratch..

Ingredients

  1. For vada
  2. 4large potatoes
  3. Paste of 2 green chillies and 1 small piece ginger
  4. 1/2 tspgaram masala
  5. to tasteSalt
  6. 2 tbspcoriander chopped
  7. Juice of half lemon
  8. 1 tspcoriander seeds coarsely ground
  9. 1 tspoil
  10. 1/2 tspmustard seeds
  11. 1/4 tspasafoetida
  12. 1 tspchopped curry leaves
  13. 1/4 tspturmeric powder
  14. 1 cupbesan
  15. 1/4 tspturmeric powder
  16. 1/4 tspsalt
  17. 1/8 tspsoda bi carb
  18. Oil for frying
  19. For red dry chutney
  20. 2pau
  21. 3-4dry red chillies
  22. 8-10 podsgarlic
  23. 2 tspred chilli powder
  24. to tasteSalt
  25. 1/2 cupzurmuri (extra fried portion left from frying vada)
  26. For green chutney
  27. 1 cupcoriander
  28. 3-4green chillies
  29. Juice of half lemon
  30. 1 pieceginger
  31. 3-4garlic
  32. 1dry red chilli
  33. Extra elements
  34. Pau as required
  35. Green chillies as required
  36. 1 cupFried zurmuri

Cooking Instructions

    Wash and boil potatoes. Peel the skin off. Let them cool down and mash. Add in salt, green chillies and ginger paste, ground coriander seeds, garam masala, chopped coriander and lemon juice. Put tempering pan on gas. Add in oil. Start adding mustard seeds, asafoetida and chopped curry leaves. Add in turmeric powder and prepare tempering. Add this into mashed potato masala. Mix well. Make medium sized balls out of the prepared masala.

    Take besan in a bowl. Add salt, turmeric powder, required water to make a thick batter. Add in soda bi carb and mix properly. Deep aalu vada in the batter and fry in hot oil. Make all vadas like this. Pour remaining batter of besan drop by drop in to hot oil to make crispy zurmuri.

    For dry red chutey in a mixer jar add pieces of 2 pau. Add dry red chillies, salt, chilli powder, garlic, 1/2 cup fried zurmuri and pulse it to make a uniform red dry chutney.

    For green chutey in a mixer jar add washed coriander, green chillies, garlic, ginger, salt. Grind it to make a paste. Add Little water to make it of a chutney consistency. Take out in a bowl and squeeze lemon. Mix well. Our green chutney is ready.

    To assemble slice a Pau tillid way. Apply both green and red chutey. Put some fried zurmuri. Put one vada and close the Pao. Serve with green chilli.
