Kashmiri Pulao Kashmiri Pulao
#reststyle - This is a traditional Kashmiri style pulao, loaded with dry fruits and cooked in saffron infused milk. It is a very easy recipe and quite popular in many restaurants. Though it slightly differs from the usual pulao as it has minimum of spices, is slightly towards the sweeter side due to the presence of dry fruits and is non spicy. Few chopped fresh fruits, fried paneer cubes and fried onion may be used to garnish this exotic rich pulao. It can be served along with any veg. / non-veg. side dish or raita. Bethica Das -
Hyderabadi Murg Dum Biryani (Kacchi Style) Hyderabadi Murg Dum Biryani (Kacchi Style)
#reststyleHyderabadi biryanis are subtle in taste and totally delicious! Hyderabadi Murg Dum Biryani in kacchi style is one such absolutely flavourful biryani.Biryani is prepared in two ways, one where the meat is fully cooked before dum which is called akhni ki biryani and the other where the meat is just marinated overnight and used raw in the dum process which is called kacchi ki biryani. The rice to be used in this case is presoaked and half cooked. Here I have presented the kacchi ki biryani which actually tastes absolutely delicious and subtle. I have always loved this type of biryani and just recently after I had the opportunity to taste such a biryani at a particular restaurant, I was dying to try it out.Well, it turned out just as I had expected and is one of the best among all the biryanis I have prepared till date. Still, this depends on personal choice, as my family feels that all the other ones I have prepared till date are equally delicious! Pooja M. Pandit -

Mutton Haleem Mutton Haleem
#Post14 - This is a very popular Hyderabadi dish during the holy month of Ramadan. It can be prepared with either mutton or chicken. But now a days, you come across vegetarian haleem too. Traditionally it is slow cooked for many hours on an open flame. But I tried the simplest method - Pressure cooking method. It is quite a rich dish with loads of dry fruits and ghee, but it is equally nutritious as it contains various types of lentils and oats (traditionally wheat is used). This delicacy is served with a dash of lime, fried onions, chopped coriander-mint leaves and dry fruits. #goldenapron Bethica Das
