Ingredients

35-40 minutes
4 people
  1. 6dried shiitake mushrooms (soaked in 3 cups hot water for 30 mins, halved)
  2. 1/2daikon radish (peeled & chunked)
  3. 1Bitter Melon (seeded & chunked)
  4. 1carrot (peeled & chunked)
  5. 2oyster king mushrooms (halved and chunked)
  6. 1 pkgfried tofu (halved chunked)
  7. 1shallot (minced)
  8. 3scallion heads (minced)
  9. 2 Tbsneutral oil
  10. 2 Tbssugar
  11. 2 tspmushroom granulate
  12. 1.5 tspsea salt
  13. 2 tspmushroom oyster sauce
  14. 2 Tbssoy sauce
  15. 1 tspground black pepper
  16. 2 tspcaramelized coconut coloring OR dark soy sauce

Steps

35-40 minutes
  1. 1

    Prep: rehydrate dried shiitake mushrooms in 3 cups boiling hot water for 15- 20 minutes. Cut half to speed up rehydration process. (Keep mushroom water). Prepare all veggies & tofu into chunks.

    Sauté minced shallots and scallion heads in 2 Tbs neutral oil. Bring out aroma before adding in all veggies, tofu chunks, and hydrated shiitake mushrooms (keep water). Sauté evenly for 10 minutes.

    Season with listed seasonings above. Stir-fry till seasonings evenly covers veggies. Add mushroom water and give quick stir. Cover and simmer on low for 15 minutes occasionally tossing to make sure all veggies are cooked evenly.
