This vegetarian dish is one that my mom always makes because she knows it’s our favorite even though we’re not vegetarian. This is a healthy and delicious braised dish that helps to balance your diet. A great way to cleanse your system from too much meat and seafood.

This vegetarian dish is one that my mom always makes because she knows it’s our favorite even though we’re not vegetarian. This is a healthy and delicious braised dish that helps to balance your diet. A great way to cleanse your system from too much meat and seafood.
Steps

Prep: rehydrate dried shiitake mushrooms in 3 cups boiling hot water for 15- 20 minutes. Cut half to speed up rehydration process. (Keep mushroom water). Prepare all veggies & tofu into chunks.

Sauté minced shallots and scallion heads in 2 Tbs neutral oil. Bring out aroma before adding in all veggies, tofu chunks, and hydrated shiitake mushrooms (keep water). Sauté evenly for 10 minutes.

Season with listed seasonings above. Stir-fry till seasonings evenly covers veggies. Add mushroom water and give quick stir. Cover and simmer on low for 15 minutes occasionally tossing to make sure all veggies are cooked evenly.

Uncover and simmer on low to reduce sauce. Taste and adjust. Enjoy 😊
