To make sprouts. Soak 1 cup mung beans in water overnight. Tie it in a kitchen towel and hang it in the kitchen. Tap it with wet hands for 2-3 mornings. Open and check the growth everyday. Once sprouts are here, transfer it in a Tupperware and keep it in the fridge.

Ingredients

  1. 1 cupsprouted mung beans
  2. 2carrots
  3. 1red onion
  4. 1 cupspinach
  5. Salt, pepper
  6. Cooking oil
  7. 1green chilli (optional)
  8. 2 tablespoonsCornflour

Cooking Instructions

    Blitz everything in a blender coarsely apart from spinach.

    Add seasoning and cornflour.

  3. 3

    Make palm sized patties and shallow fry. This quantity will yield you 8-9 patties.

    You can serve these as snack with dips or mint chutney. Or make an Indian street style snack from it by adding some greek yoghurt, finely chopped tomato and tamarind sauce to it. Or add it in a burger.
