Sesame Bread Patties

Delicious bread and yoghurt cutlets with a nutty twist from black and white sesame seeds. Perfect tea time snack.
Note: It would help to grease your palms with a little oil while sculpting the patties.

Cooking Instructions
- 1
Trim the side of the bread slices. In a bowl pour some water. Dip 6 of the 10 bread slices into the water, take out and squeeze out as much of the water as possible.
- 2
Reserve in a bowl, crumble in the remaining slices of bread and with your hands mix it all together to form a dough.
- 3
To the bread add the hung curd, finely chopped onions and green chilies, the black and white sesame seeds, sugar, red chili powder, salt and cornflour. Mix well. The mixture is likely to be a bit soggy not not too much. it should hold together.
- 4
Set aside for 10-15 minutes. Then divide into 12-14 equal parts and shape them into patties. We do not want them too thick, or it would take more time to cook through.
- 5
Heat oil in a non stick oil. Once the oil is hot, ease in the patties one by one but quickly. The heat should be high at this point. But once you've let the patties in, turn down the heat. Shallow fry on low heat until golden on both sides.
- 6
Once done, turn the heat up, and quickly take the patties out and on to some paper napkins.
- 7
Serve with lemon wedges and salad

I wanted to make some light sesame bread. If you are making this in a bread making machine, then you can add the olive oil in from the beginning. Add in the sesame last to avoid crush it. It will be fragrant if you sauté the sesames beforehand. The absorption rate will change a bit if you change flours, so you will need to make adjustments once without adding more water. Use 240 g to start with and adjust from there if you are are using domestic flour. Recipe by Pitarou cookpad.japan -

Squash patties Squash patties
I love squash. All squash. I make these patties out of yellow summer squash or zucchini or a mix of both. They’re almost like eating a hash brown. The longer you let the shredded squash drain, the more bite to the patty. These are a great vehicle for anything you want to put on top or straight out of the skillet. My daughters and I make ourselves sick eating these 😂#mycookbook SherryRandall: The Leftover Chronicles -
