Typical of Nigeria and Cameroon, this skewer features a spice mix called "Suya," which gives it its name. This mix can be used for meat, fish, and even rice and pasta! While the meat is usually cooked directly over fire or coals, we made it in a pan or on a griddle, and it turned out delicious. I'll also share how we prepared a sauce that, while not typically African, is a perfect fusion of flavors that pairs ideally with the suya and the meat!! 😍

Nigerian Wagyu beef Suya is made with Wagyu steak slices covered with ground peanuts, ginger, paprika, cayenne pepper, onion powder, garlic powder, salt, and chile flakes. The spiced beef is threaded onto metal skewers and grilled. Served over cabbage salad, beef Suya is full of flavor and perfect for backyard BBQs!
