A delicious skewer that transports you to Africa with the first bite! Typical of Nigeria and Cameroon, this skewer features a spice mix called "Suya," which gives it its name. This mix can be used for meat, fish, and even rice and pasta! While the meat is usually cooked directly over fire or coals, we made it in a pan or on a griddle, and it turned out delicious. I'll also share how we prepared a sauce that, while not typically African, is a perfect fusion of flavors that pairs ideally with the suya and the meat!! 😍

A delicious skewer that transports you to Africa with the first bite! Typical of Nigeria and Cameroon, this skewer features a spice mix called "Suya," which gives it its name. First, prepare all the spices you will use. The peanuts I use for the suya are unsalted, and they can be with or without skin, but in this case, I use them without skin.

To make the spice mix, grind the peanuts with a processor or by hand until they are almost powdered. A processor will give you a fine peanut powder, and if you do it by hand, there will be some small pieces left. When I say by hand, I mean with a mortar! That's how I did it, and it turned out like in the photo.

Add the rest of the spices, crumble the chicken bouillon cube, and process it with the peanuts until you have a fine mix. Now we have our perfect suya for the meat 🥩

As for the meat, I used beef, but you can use any type of game meat or chicken... it tastes great!!

First, soak the skewer sticks to prevent them from burning later. The meat should be in thin slices, like for breading. Thread two to three slices onto the stick, zigzagging the meat over the skewer as if sewing, with the skewer as the thread passing through! 🤣 (Those who sew will understand better this way!).

Coat the skewers with half of the suya spices; we'll use the other half to make the sauce. Cover the meat and let it marinate for about half an hour.

You can make the sauce during this time and set it aside. Simply mix about 1/2 cup of coconut milk (remember to shake the can vigorously before to mix the milk) with 2-3 tablespoons of suya spices and 1 tablespoon of honey. You can mix it well with a whisk if you have powdered spices, but if you made them with a mortar, it's better to blend this sauce with a blender. Set aside until ready to serve.

Heat a griddle or a pan with a little oil, add a bit of salt to the meat, and cook the meat over medium heat until it's to your liking. This recipe is also perfect for grilling with roasted meat, so if you try it, let me know how it goes! Serve freshly made with the sauce... and enjoy!!!
