I wanted to make my lemon poppyseed loaf, hubby wanted me to make it into cookies... adjusted recipe to fit a basic sugar cookie recipe, add lemon and poppyseed... PERFECT!!!!

I make a new dessert every Sunday and I've been trying to perfect my meringue skills. Everyone in my house absolutely loves lemon meringue pie so I jumped at the opportunity to make this treat.

Whipped up a deliciously different kind of cookie. You can swap out the whole wheat flour for all purpose flour if you'd like. These cookies come out very large and fluffy.

I adapted this recipe from a regular sugar cookie and transformed it into a delicious lemon sugar cookie recipe! They get crispy while a bit soft at the same time. They melt in your mouth releasing an explosion of flavors. You won't be able to feel the lard flavor, because it will fade away after it's cooked, however you can still substitute it for butter if you prefer.
