Whipped up a deliciously different kind of cookie. You can swap out the whole wheat flour for all purpose flour if you'd like. These cookies come out very large and fluffy.

Ingredients

  1. cookie dough
  2. 1/2 cupbutter or margarine, softened
  3. 1 cupsugar
  4. 2 tbspmilk
  5. 1 tspLemon zest, fresh
  6. 1egg
  7. 1 tspvanilla extract
  8. 1 tspbaking powder
  9. 1 tspbaking soda
  10. 1 1/2 tspground cinnamon
  11. 1 1/4 tspground nutmeg
  12. 1/2 tspsalt
  13. 1 3/4 cupwhite whole wheat flour
  14. icing
  15. 1/2 tspLemon zest
  16. 3 tbspfresh lemon juice
  17. 1 cuppowdered sugar
  18. 1yellow food dye, optional

Cooking Instructions

    Mix butter and sugar until fluffy.

    Add milk, zest, egg and vanilla. Mix well.

  3. 3

    Add remaining ingredients. Mix well.

  4. 4

    Cover and chill for about 30 minutes.

    Preheat oven to 375° F.

    Grease cookie sheet.

    Spoon 12 1" balls onto cookie sheet at least an inch or two apart.

    Bake at 375°F for 10-12 minutes.

    Remove from oven and let cool.

    For icing, whisk all ingredients together. It comes out very sweet and sour so you may need to adjust to suit your own taste.

    Use a tablespoon to pour icing on top of the cookies. Let dry before wrapping or packing.
